Mrs. Parker, 97, of Rochester, MN, formerly of Chicago, IL, died on August 17, 2018 at Saint Mary’s Hospital in Rochester, MN. Elizabeth is much beloved by her children and grandchildren and will be greatly missed. Elizabeth was a long-term resident of Rochester Health Services East (formerly, Rochester Golden Living Center East), where she was much beloved by the staff and other residents. Elizabeth was born November 16, 1920 in Chicago, IL to Stanley Jendrzejczyk and Anna Jendrzejczyk (nee’ Kulas).
Wife of Andrew Stanley Parker (deceased) of Chicago, IL. Elizabeth moved to Rochester shortly after the death of her husband, and was a resident of Rochester, MN since 1978. Elizabeth worked as a Housekeeper at Saint Mary’s Hospital. After retirement Elizabeth worked as a Nanny for several families in Rochester, MN.
Survivors include her daughter, Gail Ann Parker of Charlotte, NC; two sons, Michael Andrew Parker of Fremont, CA, and Timothy Allen Parker of Winona, MN; eight grandchildren: Andrew, Thaddeus, Kyle, Sean, Ryan, Mathew, Wesley and Holly; and seven great-grandchildren. She is preceded in death by her husband, two sons, Jerome Lee Parker and Kenneth Leon Parker of Rochester, MN, three sisters and three brothers.
Elizabeth had a love of art, gardening, sewing, caring for her children and grandchildren, driving her car, and enjoyed a quick wit, a good joke and tea with friends.
The Funeral for Elizabeth (Betty) Rose Parker will be at 11:00 a.m. Tuesday, August 21, 2018 at Saint Francis of Assisi Church in Rochester, MN with Rev. James J. Seitz officiating. Burial will be in Calvary Cemetery in Rochester, MN. Visitation will be held one hour prior to the service at the Church on Tuesday.
Memorials are preferred to the American Cancer Society or the Alzheimer’s Foundation.
